Ingredients

Chicken

  • 1 chicken, whole (1.2-1.4 kg)
  • 1 lemon, whole, peeled (reserving zest in strips)
  • 2 garlic cloves
  • 2 sprigs fresh rosemary
  • 4 sprigs fresh flat-leaf parsley, leaves only
  • 1 tsp paprika
  • 1 Tbsp coarse sea salt

Butternut Squash Soup

  • 2 garlic cloves
  • 120 g leeks, cut in pieces
  • 30 g olive oil
  • 700 g butternut squash, peeled, cut in pieces (4 cm)
  • 950 g water
  • 230 g potatoes, unpeeled, cut in pieces (2-3 cm)
  • 170 g carrots, cut in pieces (2-3 cm)

Red Wine Gravy

  • 10 g olive oil
  • 300 g shallots, halved
  • 50 g unsalted butter, diced
  • 2 sprigs fresh rosemary, leaves only
  • 1 - 2 chicken stock cubes (for 0.5 l each), crumbled, to taste
    or 1 - 2 heaped tsp chicken stock paste, homemade, to taste
  • 120 g red wine
  • 250 g water
  • 1 tsp cornflour
  • ½ tsp ground black pepper, or to taste
  • 100 g broccoli, cut in large florets
  • 100 g green beans, trimmed
