Ingredients

Lemonade

  • 100 g sugar, adjust to taste
  • 2 - 3 lemons, unpeeled, cut in halves
  • 1000 g water, chilled
  • 10 ice cubes

Fruit ice cream

  • 60 g sugar, adjust to taste
  • 500 g frozen fruit, cut in pieces as needed, frozen in a single layer (see tip)
  • 120 g cream

Basic bread

  • 140 g water
  • 40 g extra virgin olive oil
  • 2 ¼ tsp dried instant yeast
  • 250 g wheat flour
  • ¾ tsp salt
  • wheat flour, for dusting
  • olive oil
  • coarse salt, for sprinkling

Ginger-pea soup, lemon salmon, broccoli and potatoes

  • 80 g olive oil
  • 50 g soy sauce
  • ½ tsp brown sugar
  • 1 lemon, preferably organic, zest and juice
  • 4 fresh salmon fillets, skinless (150-180 g each)
    or 4 white fish fillets, skinless (150-180 g each)
  • 5 - 10 g fresh ginger, peeled and sliced
  • 1 garlic clove
  • 100 g shallots, cut in pieces
  • 100 g leek, white part only, cut in pieces
    or 100 g onions, cut in halves
  • 100 g celery stalks, cut in pieces
  • 350 g frozen green peas
    or 350 g carrots, cut in pieces (see tip)
  • 450 g water
  • 1 ½ tsp salt
  • 250 g potatoes, cut in pieces (1 cm)
  • 400 g broccoli florets
    or 400 g mixed vegetables (e.g. carrots, courgettes, mushrooms), cut in slices (0.5 cm)
  • 2 pinches black pepper
  • 50 - 100 g single cream, approx. 18% fat, to taste
