Ingredients

  • 100 g onions, cut in quarters
  • 20 g fresh ginger
  • 25 g garlic cloves
  • 120 g tomatoes, cut in quarters
  • 30 g cooking oil
  • 3 dried chillies
  • ¼ tsp asafoetida
  • ¼ tsp fenugreek
  • ¼ tsp mustard seed
  • ¼ tsp urad dhall
  • 2 sprigs curry leaves, deveined
  • ¼ tsp cumin seeds
  • 1 tbsp sambar powder
  • 600 g hot water
  • 1 tsp salt
  • 200 g split mung beans, rinsed, soaked for 2 hours
  • 100 g carrots, cut in cubes (2 cm x 2 cm)
  • 100 g potatoes, cut in quarters
  • 60 g French beans, cut in 2 cm length
  • 50 g cauliflower, cut in florets
  • 1 sprig coriander leaves, to garnish
