Ingredients

Marinade

  • 1 oz garlic cloves
  • 2 tbsp dried oregano
  • ½ oz achiote paste
  • ½ tsp ground black pepper
  • ½ tsp ground cumin
  • 3 ½ oz white vinegar
  • 10 oz orange juice, sour
  • 3 ½ oz onions in pieces
  • 2 tsp salt
  • 35 oz Boston butt or pork shoulder, boneless, cut into cubes (2 in.)

Pickled Onions

  • 5 oz red onions, quartered
  • 1 oz orange juice
  • ½ oz white vinegar
  • 2 pinches dried oregano
  • ½ tsp salt

Habanero Sauce

  • 5 habanero chilies
  • ½ oz lemon juice
  • ¼ tsp salt
  • 1 oz water

Cochinita Pibil

  • 1 oz vegetable oil
    or 1 oz lard
