  • 500 g double cream
  • 2 egg yolks, from medium eggs
  • 1 tsp vanilla extract
  • 1 pinch fine sea salt
  • 50 g fresh raspberries
  • 150 g fresh blackberries

Vanilla Layer

  • 470 g double cream
  • 240 g milk
  • 140 g sugar
  • 2 medium eggs
  • 1 ½ tsp vanilla bean paste
    or 2 vanilla pods, seeds only
  • 1 pinch fine sea salt

Chocolate Layer

  • 180 g dark chocolate (70% cocoa solids), small pieces or callets
  • 200 g milk
  • 400 g double cream
  • 160 g sugar
  • 4 Tbsp cocoa powder, sifted
  • 1 tsp natural vanilla extract
  • 4 egg yolks, from medium eggs
  • 1 pinch fine sea salt

Serving

  • 150 g fresh mixed berries
