  • 30 g Indonesian red spice paste, room temperature
  • ¼ tbsp ground black pepper
  • 1 ½ tsp salt
  • 30 g red bird's eye chillies
  • 4 cm sand ginger
  • 2 tsp shrimp paste
  • 1 tbsp coconut oil

Betutu Chicken

  • 1 whole free-range chicken (approx. 600 g), feet and neck removed
  • 5 fresh kaffir lime leaves
  • 1 banana leaf, blanched or wilted over open flame (approx. 40 cm x 50 cm)
  • 800 g water
  • 40 g toasted peanuts, unsalted (see tips)
