Plant-based milk is on the rise, appealing to ever more consumers, from vegans to meat-eaters. Cooking with non-dairy milk is becoming increasingly popular in the kitchen. Some common reasons for making the switch include the perceived health benefit, allergies, environmental concerns or taste preference. Check out our guide to non-dairy milk below: • Soy milk is the most popular choice. It is mild in flavour and can be heated easily. It also tastes good in hot drinks. Use it as a direct swap for dairy milk in recipes. • Almond milk is also popular, with a richer flavour, and easy to use in hot drinks and recipes. • Cashew milk is rich and creamy, and very versatile. It adds a richness to savoury and sweet dishes. • Oat milk is a good all-round ingredient, with a sweet and mild flavour. This is a fine, strong, mesh bag to strain the nut milk. Layers of muslin can also be used. Some milk recipes, such as oat milk, rice milk, hemp milk and coconut milk are ready in minutes in Thermomix®. For such a humble cooking ingredient, legumes - or pulses as they’re also known - boast an impressive nutritional profile. Did you know… 1- They’re a great source of protein, low in fat, high in dietary and soluble fibre and packed with important vitamins and minerals including calcium, potassium, zinc, B vitamins, folate and antioxidants. 2- Legumes are a carbohydrate with a low glycaemic index (GI), which means they are broken down more slowly, so you feel fuller for longer. 3- They’re not only healthy and nutritious but cheap to buy, which makes them a popular staple in many cultures and cuisines. 4- The legume family consists of plants that produce a pod with seeds inside and include lentils, peas, chickpeas, beans, soybeans and, interestingly, peanuts. Sugar, butter and cream; it takes just three simple ingredients to make delicious, sweet caramel. Used to flavour desserts and puddings, as a filling for truffles and chocolates and as a topping for ice cream and custard, it’s incredibly versatile. While making caramel at home might feel daunting, thanks to your Thermomix®, it’s easier than you may think. We’ve put together some answers to frequent questions about caramel making. Is caramel a classic or a modern flavour? With so many different ways of preparing it, the finished product is entirely up to you! If you’re in the mood for nostalgia, try making butterscotch or toffee and be transported back to your childhood. If you fancy something more modern, try adding some toasted nuts or seeds to your caramel, pairing it with chocolate, and sprinkling sea salt over the top. If you’re making it for a dinner party, try surprising your guests by adding some unusual flavours like cardamom or ginger to a showstopping caramel dessert. How do I make caramel? • With Thermomix® TM6, using Sugar Stages mode to make a caramel sauce couldn't be easier! Take advantage of the higher temperatures and simply follow the steps in Guided Cooking. • For Thermomix® TM31 and TM5,make a sugar syrup until the temperature reaches 120°C. Transfer the syrup to a saucepan and heat over a medium heat, watching carefully and gently swirling the saucepan as soon as the syrup changes colour. Test a few drops on a white plate to get to the right shade of amber. • Tip for success: if making caramel in a saucepan, use a lid in the beginning until all water evaporates. The lid will trap the steam and wash down any sugar crystals from the sides of your saucepan. This will keep your caramel clear and fluid. • A shortcut to super quick caramel is to use ready-made caramel sweets. Chop them in Thermomix® and melt 3 min/75°C/speed 1 or longer, depending on quantity. What should I keep in mind when making caramel? • Caramel cooks at very high temperatures. Handle with care and use the spatula to prevent it from coming into contact with your skin. Most importantly, resist the temptation to lick the spatula until it’s fully cooled! • If caramel residue hardens in your Thermomix® mixing bowl, add 1 litre water and 1 Tbsp vinegar then start Pre-clean on your TM6. For TM5 and TM31, add 1 litre of hot tap water and heat 10 min/70°C/speed 1. What can I use caramel sauce for? Delicious, thick and creamy, it’s hard to resist eating it all from the jar! Instead, try drizzling it over ice cream, adding it to brownie batter, or sandwiching it between two sponge cakes. You could also make a big batch and divide it into smaller jars to gift to friends. I’ve made toffees, peanut brittle or honeycomb. What should I do now? Leave your delicious confections to cool completely before wrapping them up well so they don’t absorb moisture from the air. Break brittle or honeycomb with your hands and keep it in an airtight container, and store caramel sauce in a sealed jar in the fridge. Cut toffees into neat shapes with a sharp kitchen knife, heated or lightly oiled if toffee sticks to the blade. For crisp edges, use a gentle back-and-forth sawing motion, rather than pressing down hard. Wrap your toffees in squares of baking paper and store in an airtight container. If it’s a warm day, you may want to consider keeping the container in the fridge. Top tip: In the summer, add a layer of rice covered with parchment to the base of the box to absorb humidity and make your toffees last longer.
Let nothing stop you from baking delicious breads, pizza doughs, brioche or any recipe based on fermented doughs. Old dough makes new dough If you have only one packet of yeast left, you never need any more if you use the “old dough method”. Make some bread or pizza dough with your last remaining yeast. You could start with pizza dough, baguette, or basic bread dough. Once the dough has fully risen, remove a small amount, the size of an egg or a small bun, mix it well with equal amounts of water and flour and let it sit in a jar or bowl overnight at room temperature. In the morning you will have a bubbly starter ready to be incorporated into any recipe instead of yeast. Simply subtract the weight of its ingredients from the ingredients of the recipe. Rising time may be slightly longer, so be patient. Good thing you are staying at home… Your reward? A deep, rich flavour that only hours of fermentation can deliver. But remember to set aside some of the new dough for the next batch. Sourdough like our ancestors If you have no yeast at all, this may be the time to grow your own sourdough starter. Sourdough existed long before commercial yeast was available, and is the best leavener for delicious artisanal bread. Raising sourdough starter from flour and water can be achieved in 5 days to a week. Every baker has their own method, from simply combining white flour and water to adding rye flour, apples or grapes for extra fermentation stimulation. The general principle is to encourage the yeast that is naturally present in flour to develop, by feeding it regularly with added water and flour. An active sourdough starter can then be left to “sleep” in a jar in the refrigerator for several weeks at a time. Flatbreads from around the world Many flatbreads require no leavener. Wheat tortillas, Indian rotis, lavosh are only a few of the fun international options you can make with your children, rolling them out or hand pressing them and then cooking them in the frying pan instead of the oven. Use them as wraps or serve alongside the meal to soak up gravy or sauce. And a hearty galette, or Breton crêpe made with buckwheat flour (so easy to grind to flour in Thermomix®), to be filled with eggs, cheese, ham or more, is a distant but worthy cousin of the flat bread. Chemically leavened is good too Baking powder and baking soda are not just for sweet baking. They can also help quick breads to rise. Ireland is famous for its soda bread, scones now have a reputation far beyond their British origins, and cornbread or biscuits from the American South will make any meal feel special. By the time you get your hands on yeast again, the alternative recipes will have become such daily favourites in your household that standard bread baking may feel like a thing of the past!
When it’s warm outside you may find yourself wanting light, fresh food that’s quick and easy to prepare. Salads are the ultimate no-cook meal, and they can be adapted to suit your tastes. Serve as a light starter ahead of a main dish, alongside grilled meat, fish or vegetables, or even as a complete meal. You can prepare salads and then pack them up to take to work for lunch, or to the beach or park for a picnic with the family. Of course, the combination of ingredients is entirely up to you, and the possibilities are endless! Build your own salad A salad is a great way to try out new flavour and texture combinations. For a varied and balanced salad, simply build your own using the following components as a base. • Base: pick one or mix several; green leaves (lettuce, kale, rocket, spinach), chopped red or white cabbage, pasta, rice, or cooked grains, such as quinoa, bulgur or farro. • Raw or cooked vegetables: add colour and flavour to your base by arranging some of the following on top; sliced avocado, grated carrots, thinly sliced onions, sliced or cubed capsicum, cucumber, or zucchini. Sautéed mushrooms and caramelised roasted carrots, pumpkin, or sweet potatoes add extra ‘umami’ flavour. • Optional protein: to serve as a main course, add some protein to your salad. Steamed or smoked salmon, shredded chicken, hard-boiled eggs or cheese all make great toppings. For a meat-free salad choose tofu, cooked beans, or lentils. • Fruit: fruit adds freshness and sweetness to a salad; opt for fruit that’s in season to enjoy it at its best. Mango pairs well with salmon, and cranberries taste delicious with chicken. Try adding peaches or plums to fresh ricotta, or give the Strawberry salad with caramelised sherry vinaigrette a go, or topping your leafy salad with dried fruit such as apricot, figs, cranberries or sultanas. • Crunchy toppings: the key to a great salad is a mixture of textures, so try sprinkling a handful of nuts, seeds, croutons, noodles or tortilla or pita over your assembled salad. To intensify the flavours, toast the nuts and the seeds before using. • Other toppings: olives, fresh herbs, sprouts, anchovies, capers and pickles will make your salad even more delicious! • Dressing: to finish, drizzle over your favourite dressing. Dressings are so easy with Thermomix®; try the Mustard balsamic vinegar dressing, the Vegan Caesar dressing, or the Japanese-style dressing and mix up your flavours. Above all, have fun with your salad making! Get creative and mix and match ingredients with different textures, flavours and colours. Serve your salad mixed in a bowl or a lunchbox, presented in layers in a jar, or served separately on a tray for guests to pick and choose. Use serving rings to plate the salad ingredients elegantly. For salads containing green leaves, remember to add the dressing just before serving to keep everything fresh and crisp. Thermomix® tips • Wash lettuce and other ingredients: use the Varoma dish to wash vegetables and fruit under running water, then cover with the Varoma lid and shake well to remove the excess water. • Chop: chop soft vegetables, fruit or hard-boiled eggs 3-4 sec/speed 4; for hard vegetables, 3-4 sec/speed 5 will work well. To chop lettuce, place leaves in mixing bowl, cover with approx. 1000 g water and chop 10 sec/speed 4. Then drain through Varoma dish. • Shred: place deboned, cooked meat without any sauce in mixing bowl and shred 4-5 sec//speed 4.

Types of Cuts The cutter disc has two sides, one for slicing and another for grating (think 'slate for slice, grey for grate', allowing you to prepare fruits and vegetables with four different cuts: ● Thin slices (1-2 mm) ● Thick slices (4-5 mm) ● Thin grating (2 mm) ● Thick grating (4 mm) 5 Tips to make the most of your Thermomix® Cutter Remember to use fruits and vegetables that are ripe to eat but firm to the touch (e.g., tomatoes, avocado, mango). Salami or other cured sausages can be sliced with the Thermomix® Cutter. Fresh or cooked sausages are too soft to slice neatly and evenly. For best results, always slice and grate in batches. This prevents overflow in the cutter basket (max. 800 g of food). Before starting to slice or grate, be sure to weigh all the ingredients according to your recipe. Separate ingredients according to the type of cut. This way, you only need to flip your Cutter once - to slice or to grate. Cooked and frozen ingredients are not suitable for slicing or grating with Thermomix® Cutter (with the exception of cooked beetroot). Place the cutter side up for the side you wish to use. I.e. If you're grating, place the grey side up. If you're slicing, place the slate side up. Cleaning your Thermomix® Cutter Easy to clean, you can wash it by hand under running water or use dishwashing detergent. Cookidoo® search is constantly improving so that you can find the recipes you want, when you want. Follow Julie’s search journey and learn how you can also become a master at navigating search! A mother of two, Julie is always on the lookout for ways to use up leftover ingredients and get dinner on the table after a busy day of work and school. Tonight’s goal: use up leftover tomatoes and make a quick stew with her Thermomix®. Starting broad, Julie begins her recipe search by writing in “stew”. While typing in her search term, auto-suggest shows: 1) suggested search terms and the number of recipes associated with those terms 2) specific recipe suggestions and 3) suggested category filters. While the suggestions look great, Julie also wants to ensure she uses up her leftover tomatoes. She types in “stew with tomato”. She gets 53 mouth-watering recipe results. In addition to searching on “Recipes”, Julie can also search on “Collections” or “Articles” in order to find further recipe inspiration. As she scrolls through her recipe results, Julie realizes the total time of some of the recipes does not fit into her tight schedule. Therefore, she clicks on FILTERS to further drill-down her results. FILTERS provide her with many options to focus on what matters to her –including category, difficulty and recipe rating among others. She is excited to see that filtering by ingredients allows her to include and exclude desired ingredients. Since she is not fond of coconut, Julie types in the ingredient with a minus in front “-coconut milk”, to exclude it from the recipe results. To make sure cooking leaves time for relaxing with the family, she also filters by recipes with a total time under 45 mins. The recipe results now give her a curated selection of recipes tailored to her exact needs. Julie gets inspired to go meat-free and bookmarks the tofu stew – it is exactly what she was looking for – a quick and tasty tomato-based stew! Dessert is still missing. While searching for her stew, Julie was intrigued by the option to filter by language or country. Hmm, she did take many years of French in school… to find just the right ending for her meal, she filters on desserts and sweets, deselects “United Kingdom” and applies the French language filter to see what is on offer in all French-speaking Cookidoo® countries. Searching in different languages certainly allows Julie to expand her culinary horizons! Before getting to work on her stew, Julie notices the option to save default searches in her profile. Clicking on the banner under filters brings her to her profile. Default search allows Julie to filter by Thermomix® model(s), language(s) and country(s). Julie chooses Australia and France as default countries. Cookidoo® remembers her preferences and will always have the full recipe offer from both those countries right at her fingertips every time she searches. Default search also applies her preferences to all her Cookidoo® devices: webpage, app and Thermomix. If she wants to adjust her default search, she can easily update it at any time in her profile! While some foods require low heat for the perfect texture, others need a blast of heat to bring out intense, slightly toasted flavours and crispy textures. 1. High Temperature mode is… …the perfect starting point for any recipe that would benefit from more intense flavours. Using temperatures above 120ºC, this mode is ideal for cooking techniques like sautéing, browning, and caramelizing. 2. How to use When working at high temperatures, safety is essential. For this reason, recipes using the High Temperature mode are only available through Cookidoo® Guided Cooking recipes. Once you find a recipe using High Temperature mode on Cookidoo®, simply follow the instructions on your Thermomix® screen. 3. Benefits Sautéing, browning, and caramelizing ingredients adds colour, aromas, and flavours to recipes like sauces, stews, rice and pasta. 4. What recipes can you prepare? Two new modes have just arrived on your Thermomix® TM6! The Thicken Mode is used to create delicious sauces to enhance your daily dishes, and the Rice Cooker Mode cooks rice and other grains directly in the mixing bowl. With these intelligent and automated modes, Thermomix® makes your daily cooking experience even easier. Thicken Mode The perfect mode to make your savoury or sweet starch-thickened sauces, hot emulsified sauces and desserts and spreads. With this mode, you can easily make your family recipes in your Thermomix®. Simply place the ingredients in the mixing bowl, select the mode, set the temperature (see Quick tips below), and turn the knob. Thermomix® will control the cooking time based on the amount of ingredients, type of ingredients and temperature. Quick tips • For starch-thickened recipes set temperature to 100ºC – These recipes are thickened using any type of flour, such as wheat flour, cornflour or potato starch as the thickening agent. Béchamel sauce, Soubise sauce, or Crème patissiére are some recipes using a starch as the thickening agent. • For egg-thickened recipes set temperature to 80ºC – These recipes use eggs or egg yolks as the thickening agent, and include hot emulsified sauces, desserts or spreads. Try the Hollandaise sauce, Béarnaise sauce, or Orange liqueur zabaglione. • For some hot emulsified sauces use the butterfly whisk – The butterfly whisk will incorporate more air into your sauces, creating the perfect egg foam. Thermomix® is so much more than a blender, food processor and mixer – it combines over 20 kitchen appliances in one. Find basic recipes and tips that will help you get inspired to create your own recipe masterpieces with the Created recipes feature!
Slow cooking with Thermomix® is all about relaxing and building up flavours. Cooking ingredients over a longer period of time brings out deep flavour in a wide variety of different ingredients, both sweet and savoury. Simply prepare the ingredients, then sit back and unwind for up to 8 hours while Thermomix® does the cooking for you. Slow cook your favourite recipes ahead of time, and freeze to have dinner always ready when time is short. The Slow Cook mode is ideal for cooking economical cuts of meat such as chicken thighs, pork shoulder, lamb shoulder and beef brisket, which are typically tough if cooked for a short amount of time. To create your own recipe, start by referring to a similar Thermomix® recipe for inspiration. Then place all your ingredients and seasonings in the mixing bowl, evenly distributed around the mixing knife. Add enough liquid such as broth or sauce to just cover the ingredients, mix well using spatula, select the time and temperature (use the settings from your reference recipe) and start the Slow Cook mode. Your chosen ingredients will become soft and succulent after slow cooking in Thermomix®. Tips • To freeze your slow cooked recipes, allow to cool to room temperature before freezing. Freeze in dishes that can be reheated in the oven, when defrosted. • Use the blade cover for more sensitive ingredients such as chicken or beans, or to avoid shredding the meat. • You can use either fresh or frozen ingredients for slow cooking. When using frozen ingredients, thaw meat, poultry or frozen vegetables thoroughly before cooking. • To ensure even cooking, cut the pieces to roughly the same size and thickness. • Fat won’t drain away when slow cooking meat, so it is best to trim away any fat before starting. • For a deeper and richer flavour, before you start slow cooking, use basic High Temp. recipes to brown the meat and sauté or caramelise onionsor vegetables • Enhance the flavour by adding spices or herbs at the beginning of cooking. The final touch • Pasta, rice or fresh ingredients that need a short cooking time such as spinach, broccoli, peas, zucchinis and fresh herbs, can be added and cooked at the end of the slow cooking time. • Stir in milk, sour cream or cream cheese at the end for a rich texture and fresh taste. 3 ways to thicken a sauce in your slow cooked recipe • Add 10 g flour at the beginning of the recipe. • Add at the end of the recipe and bring it to a simmer. • Add 20 g almond meal to the mixing bowl a few minutes before the end of cooking. Alternatively, you can reduce the sauce a bit by removing the measuring cup at the end of cooking and cook 10 min/Varoma//speed 1. Good to know… • Use a maximum of 800 g meat. • To protect against rust, add any acidic ingredient such as tomato, wine, vinegar or lemon juice. • Use pre-cooked or canned red kidney beans, as the temperatures reached by slow cooking are not high enough to kill the naturally occurring toxins.

Import from Cookidoo® With an active Cookidoo® membership, you can import any Cookidoo® recipe into Created recipes. Please note, not all the Thermomix® modes are currently supported. When you open a Cookidoo® recipe, click “Add” then simply select the “Add to Created recipes” option. Your recipe is now saved and ready to be edited in your Created recipes. 2. Import from the Vorwerk Recipe Community To help create one digital destination for organising all your recipes across the Web, recipes from our Vorwerk Recipe Community can also be imported into Cookidoo®. When opening a recipe on the Vorwerk Recipe Community, simply click on the new “add to Cookidoo®” button. Your recipe is now saved and ready to be edited in your Created recipes. Please keep in mind, unlike recipes on the Cookidoo® platform, recipes on the Vorwerk Recipe Community do not come with our Vorwerk success guarantee. Always follow the general safety instructions and carefully monitor the cooking process to avoid injury. Once your recipes have been imported Visit the Ingredients & Preparation section of your recipe to add structured ingredients and create Thermomix® settings. Discover Thermomix® Blade Cover & Peeler Why peel potatoes if you don't have to? With the new Blade Cover & Peeler, your Thermomix® TM5 or TM6 will effortlessly peel your potatoes and hard root veg for you. Here are some simple how-to's: First the new Blade Cover & Peeler is placed over the blade. To do this, hold it by the central plastic insert and make sure the shaft with the peeler is correctly positioned. Then place the vegetables into the mixing bowl (max. 800 g). For best results, use vegetables of the same size. Add 600 g water, regardless of the amount of vegetables used, add 1 teaspoon of oil (optional) to prevent frothing. When using your Thermomix® TM6 secure the lid and measuring cup and start the "Peeler" mode. The new Peeler mode will soon be coming to Australia and New Zealand - keep your eye out for this update on your Thermomix® TM6. With the Thermomix® TM5, place the simmering basket on the mixing bowl lid instead of the old model measuring cup (use the locking measuring cup if you have) and peel your vegetables for 4 minutes / speed 4. Once the mode has finished, drain the peeled vegetables (retain the nutrient-rich water to water your pots or garden) and continue preparing your recipe.

Familiarise yourself with Thermomix® by cooking recipes from Cookidoo® before attempting to adapt or create your own recipes. As a great starting point, search Cookidoo® for a recipe that has a similar method to the one you want to cook. Use the Thermomix® recipe as a template. If the quantities of ingredients are significantly different, adjust cooking times. Make sure you don’t exceed the capacity of the mixing bowl (maximum 2.2 litres). Adapt the method of the Thermomix® recipe to the needs of your recipe. Sometimes two steps in a traditional recipe can be achieved in a single Thermomix® step! Download Cooking Tables Tips for adjusting recipe sizes Organising the preparation steps • Dry to wet: start with tasks that require a clean and dry mixing bowl (e. g. milling sugar, chopping herbs). • Cold to hot: knead dough, whip cream, blend drinks or chop onions before cooking sauces or soups. • All-in-one: often several ingredients can be added at the same time, shortening a recipe. Also, whenever possible, cook several dishes at the same time using the simmering basket and/or Varoma. General Tips • Make milling grains, nuts, bread or sugar and grating cheese the first step. These tasks work best in a clean and dry mixing bowl and little to no cleaning will be required before the next step. • Knead bread, pizza or pasta dough before other tasks. These doughs are usually easy to remove from the bowl, which avoids unnecessary cleaning. • Mix sauces, cake and pancake batters or biscuit doughs in a few seconds on speeds 2 – 5. Note that all ingredients can usually be mixed at once. • Whipping egg whites requires a perfectly clean bowl, so start with this task whenever possible and remember to use the butterfly whisk at a maximum speed 4. • Chop vegetables before sautéing them. Chopping vegetables together with oil can make it easier or sometimes even unnecessary to scrape down the mixing bowl between functions. • Cook or stew at 90 – 100°C to retain as many nutrients as possible. Cooking time depends on ingredients, so refer to a similar Thermomix® recipe for guidance. Use to stir or mix without chopping. • Cook with milk or cream at 90°C to avoid overboiling. Stir sauces quickly to avoid lumps, on speed 2 – 4. • Cook/steam in the simmering basket or Varoma ingredients such as vegetables, rice, prawns and meatballs. Add liquid to the mixing bowl or cook them at the same time as you cook another dish in the mixing bowl. Happy cooking!
5 Steps for Beautifully Dyed and Decorated Easter Eggs Learn how to naturally dye eggs in your Thermomix® with the TM6 Egg Boiler mode, and get great tips for turning your eggs into artwork! 1. Choose the right eggs When naturally dyeing your eggs, use white eggs for the best results. You can also dye brown eggs, but expect different tones of colour than with white eggs. For a larger variety of colours, dye both brown and white eggs! 2. Prepare the egg shells To ensure the egg shells absorb the colour, get the kids to place the eggs in a vinegar bath (1 tablespoon vinegar to 1L water) for a few minutes before dyeing them. You can also rub the shells with a cloth soaked in vinegar. This roughens the shells and ensures that the colour adheres.
Rice is a universal ingredient, enjoyed in various ways to accompany a variety of dishes. Basmati rice traditionally accompanies Indian curries, Jasmine rice traditionally accompanies Thai-style curries, brown basmati is popular as a healthy and tasty rice, and long grain rice is the universal rice enjoyed by everyone. Let Thermomix® prepare the rice side dish, while you prepare everything else. The temperature and time of cooking will be defined by Thermomix®. The rice is cooked in a precise and gentle way, so that you can rely on a good result every time. The TM6 Rice Cooker mode also cooks other grains, apart from rice. Grains like millet, bulgur or spelt can also be cooked with the Rice Cooker mode. 5 Steps to perfect rice Choose the rice or grain. Weigh out the right amount of raw rice or grain, approx. 75g per person. Add water, salt and oil according to the recipe or the package and stir to coat grains. Put the simmering basket on the lid instead of the measuring cup. Start the Rice Cooker mode. Tips - Rice Cooker mode • Always replace the measuring cup by the simmering basket when using the Rice Cooker mode. • The ratio of water will depend on the grain that you are using, the brand and also on the grain amount. Start by using the Rice Cooker recipes to familiarize yourself with the amount of water to grain, before adjusting to your own taste. • The brown rice or wholegrains may need to be soaked before being cooked. • The cooked rice will keep warm for approximately 10 minutes in the Thermomix® before serving. • Refrigerate cooked rice for up to 2 days, or freeze for up to one month.
Meal planning is one of the best ways to help you stick to your food budget. A few key strategies (for example, planning meals based on the ingredients you already have in your kitchen, buying seasonal produce and making freezer-friendly meals in bulk) can reduce your weekly spend, as well as limit your food waste. Shop smarter During their local growing season, fresh fruit and vegetables are often cheaper, tastier and more nutritious, so when planning meals be sure to select recipes that feature what’s in season. But don’t neglect the frozen food aisle! Most frozen fruit and veg are snap frozen not long after harvesting, so they’re just as good for you as fresh produce. Meat and seafood are often the most expensive items on your weekly shopping list, so be sure to check what’s on sale at your local supermarket before you start meal planning. You can also stretch your meat-based meals by bulking them up with legumes, grains or extra veg. For example, for your next stir-fry, cut the amount of meat in half and replace it with mushrooms or tofu. Or consider including a few meat-free meals to your weekly plan (it’ll be great for your health as well as your wallet). Whenever possible, avoid paying for packaging. Convenience comes at a cost, so skip the individual portions and the pretty packaging (for example, a block of cheese is often cheaper than pre-sliced or shredded cheese). And don’t be shy about giving non-branded products a go. Multiple consumer reports have showing that non-branded products often taste just a good as their branded equivalent (and cost considerably less). Easy homemade Making your own pantry and fridge staples can save quite a bit of money both in the short and long-term. It’s easy to create so many basics in your Thermomix® – flours, baking powder, icing sugar, spice blends, stock pastes, nut milks, condiments – and it makes stretching your budget a cinch. Once the basics are sorted, move on to making your own homemade staples like bread, muesli, yoghurt and more. Devoted bakers can save an incredible amount of time from investing in a Thermomix®. It does all of the heavy lifting, or rather mixing, for you, tackling one task while you’re assembling other components. Sure, you might not get an arm workout out of your baking day, but you’ll be saving a ton of time and energy. Waste not, want not When the broccoli is looking a little worse for wear and the carrots are no longer crisp, don’t just throw them out – use them in soups, a vegetable mash or a green smoothie. Stale bread siting on the bench? Mill it into breadcrumbs and store it in the freezer. Bumper crop of basil in your garden? Turn it into pesto, or chop them up and freeze them into ice cubes to store in the freezer. Reducing your food waste is not only good for the planet, but also your budget. If you’re a serious cook who makes a lot of pureed soups, sauces from scratch or enjoys a morning smoothie, then a Thermomix® should be at the top of your wish list. Sous vide is a precise, gentle method of cooking where food is placed in a water bath, protected by a food-safe, air-tight bag, and cooked at a controlled temperature. Cooking the food in a sealed bag locks in all the natural flavours and nutritional benefits and also makes for extremely fuss-free cooking. With Thermomix® capability to control the temperature in 1°C increments, total accuracy is achieved while blade cover protects the sous vide bags. Top Tips Sealing the bags: There are two ways - either manually by immersing heat-resistant zip-lock bags in water to remove the air, or by using a vacuum sealer. When it comes to choosing a method, base your decision on the recipe you’re preparing. If there are liquids in the bag, choose the water immersion method. The vacuum sealer method is most effective for recipes where there is no liquid in the bag. For the water immersion method: Place the food in high-quality, zip-lock bags (not polythene bags). Look for bags made without BPA (Bisphenol A), they're widely available from major retailers. Fill up a sink or large bowl with water and then seal the bag, leaving a gap in the seal of approx. 3 cm. Submerge the bag, leaving the open seal above the water. The pressure of the water will force the air out. Fully seal the bag before submerging completely to ensure all the air has been removed. Clever prep: For the best results, cut your ingredients to roughly the same size and thickness. Season well and place in the bag or bags, laying the ingredients as flat as possible. Flavour enhancing: Marinating tougher cuts of meat tenderises them while also enhancing their flavour. Add some of the marinade to the sous-vide bag and use the water immersion method to seal the bags for these types of recipes.

Make It Better With Beer! Pairing beer with food can enhance the flavour of your food and is a surprisingly versatile ingredient for cooking, too! Read on to learn how to perfectly pair your brews! Cuts of Beef You might be used to pairing steak with red wine, but malty beers enhance the flavors of the beef by contrasting the salt and adding depth to the meat. Belgian-style ales like Dubbels and Tripels with hints of caramel and brown sugar coax out the succulence by breaking down fat and mirror the caramelisation in red meat. These sweet-leaning brews also linger on the palate to enliven the juices with every bite and round out the nuttiness of the beef – especially in dry-aged and highly marbled cuts. Chicken Dishes Beer is an excellent choice for roast chicken and decadent dishes like Coq au Vin or Chicken Marsala to bring crisp notes to the mix. Farmhouse ales like a Saison are highly carbonated to cut the richness, and the fruitiness balances the butter without skewing too saccharine. It's fizzy enough to counteract the fat and oil and fresh enough to palate cleanse the savoury sauces. Here’s why Kami Ramini, Integrative Nutrition health coach and mum of two won’t go camping without her Thermomix® again. Let me start with a confession: I’ve had my Thermomix® for over eight years and I have only in the last few years, taken it on holiday with me. I know… I give myself a virtual face-slap now when I read those words! How could I not have included something which makes my life sooooo much easier in my by-car travel plans? But I just hadn’t. We’d pack up the car, drive to wherever we were staying or camping and either crack out the camp stove (if we were camping) or make do with whatever kitchen we found at the house we’d rented. No huge drama I’ll admit – we still ate and ate well. But this time, something clicked (probably my knowledge that I wouldn’t have time to pre-make much at all), a lightbulb went off and I decided I’d take my Thermomix® camping. So, I did a shopping list on Cookidoo® of quick and easy recipes I know the family like, sent it off for click and collect and a few days later, popped my Thermomix® on Transportation Mode and into the back of the car. To say we will never turn back isn’t giving the game-changing truth of having my beloved Thermomix® with me at our campsite enough credit. I will literally never go camping, glamping or travelling (by car) again without my Thermomix® and here’s why: We practically never cracked out the camp stove: This, for me, is enough of a game-changer in itself. We have small kids and while they’re pretty good and know they’re not to come too close, I’m still always a little nervous about the camp stove, especially things like boiling pasta water. If there’s the option, I’ve always gone and used the shared kitchens at campsites and cooked ahead to have meals pretty much ready to heat up. Having everything prepped is great but it also takes a lot of forward-planning that the busy-ness of life doesn’t always allow time for. OMG, how amazing it was to set up the Thermomix® and do practically everything there! On just one day, feeding our family of four, we had these amazing recipes from the Thermomix®: Porridge (we added in frozen raspberries for the last 4 minutes to make “pink porridge” for the kids, which they loved). Never have I loved the “lock and leave” style of Thermomix ® porridge as much as this morning when I was walking the kids over to the toilets, putting on sun-cream, looking for hats etc. all the while with a warm and nutritious breakfast literally making itself. Smoothies galore as mid-morning or arvo snacks. Sausage ragu with orecchiette for dinner , I threw a handful of spinach in before serving and voila, dinner in a flash. Alongside these recipes, we had wraps for lunch with the marinated tandoori chicken I had prepped a week earlier, fresh fruit and veggie sticks for snacks and of course those camping staples of pikelets, the traditional cheese platter at sunset, maybe a cocktail… and chocolate after dark! The amount of cleaning was so contained We all know how it is throwing all the pots, pans and dishes from each meal into the tub and taking it to the kitchen to wash up when you’re camping. Again, it’s all part of the cause but minimising the pots and pans and just taking my Thermomix® plus the plates (Thermomix® after a pre-clean of course!), was totally amazing. Enough said – honestly, game-changing in my mind. Saved me time We all know our Thermomix® saves us heaps of time and it’s no different when you’re camping/away. I sometime slip back into the “pre-Thermomix®” way of prepping but am getting more and more clued in to what works for my family and boy it saves me a heap time. Given that I’m on holidays too. On our barbecue night, instead of chopping salads by hand (admittedly only 10-15 minutes) and pulling out pre-made sides, I made the Broccoli salad. I spent those precious minutes practicing frisbee with my 5-year-old, instead of in the camp kitchen. #priceless in my book. TIP: All you need to use your Thermomix® while camping or caravanning is access to power. Or download the Cookidoo® app and follow the steps that way. Saves space Having simple Thermomix® meals and snacks pre-prepped saves on lugging all those pots and pans. I can say with confidence, is that whether I’ve been able to cook ahead or not, only my Thermomix ® will be coming with me. All the other kitchen things, other than the coffee machine (old habits die hard), will be staying in their box in our garage. Because other than a barbie for a few of the nights, I reckon my Thermomix® will be doing it all, it would be silly not to.

February 14 is Valentine's Day — a day of love! So why not treat your loved ones to a delicious chocolate dessert to show them how much you care?
From cheese to yogurt to proving doughs, learn more about the TM6 Fermentation mode. Homemade soft cheese Milk needs to be heated to an exact temperature in order to curdle. With the TM6 Fermentation mode , you have an environment of controlled humidity with temperatures between 37ºC and 70ºC, which remain stable and constant for periods of up to 12 hours. A perfect yogurt maker Place the yogurt mixture directly in the mixing bowl or in individual yogurt jars in the Varoma, then let Thermomix® ferment for 8-12 hours. Tips for all kinds of yogurt: • Drinking yogurt: make yogurt in the mixing bowl and at the end of the fermentation, mix for a further 10 sec/speed 4. Pour into bottles and store in the fridge until needed. • Using raw milk: heat 15 min/90°C/speed 2, then leave to cool to room temperature before starting the recipe. • Extra thick: the heating and cooling process described for raw milk can also be used with pasteurized milk to produce a thicker consistency. Or, add milk powder for extra thickness. • Creamy yogurt: replace 100-200 g milk with single cream. • Soy yogurt: a great alternative for dairy yogurt. Try it at home and see how much you save! Good to know… • When fermenting in Varoma, to protect against oxidation during long fermentations, add the juice of half a lemon or a teaspoon of vitamin C (ascorbic acid) to the water in the mixing bowl. Bakery fresh bread For consistently good results with yeast-raised doughs, keep the dough: • Away from draughts • At a temperature between 24ºC and 28ºC • With humidity around 75% These conditions can be challenging to reach in a normal kitchen, so use the Fermentation mode for ideal results! Two easy steps to prove dough in the Varoma dish: Grease the sides of the Varoma dish and line the bottom with baking paper, making sure to keep the holes unobstructed (see tips below). Place the dough in the lined Varoma dish and close Varoma. Place 250 g water in mixing bowl, set Varoma in position and start Fermentation/1-2 hour/55ºC Good to know… • To ensure holes in Varoma dish remain unobstructed and allow steam to flow, place the butterfly whisk, lying flat, or two small chopsticks in the bottom of the dish to lift the paper lining off the holes. • Richer or denser doughs are perfect for Fermentation mode as they take more time to rise than plain white doughs. Allow to prove in the Varoma dish until the dough doubles in size.

Make blending a breeze - Blend mode Enjoy soups, smoothies, and purees with the perfect texture. Blend mode is pre-set at 30 seconds, and the speed of the blades slowly increases from speed 5 to your target speed (speed 6-8) gradually and automatically for added safety! Read on to find some of our blending tips! Tips for soups Who doesn’t love the texture of a perfectly velvety soup? With Blend mode, say goodbye to lumps, vegetable fibres, and peels. Thermomix® transforms everything into a perfectly uniform and creamy texture. There are some vegetables that have a higher water content than others (think zucchini, tomato, broccoli, and celery, among others). Take this into consideration when making soup so that it doesn’t turn out to be too watery or too thick. If you think you’ve added too much water, remove some before blending, and save it as a base for your next vegetable broth! Tips for purees Potato, sweet potato, carrot, broccoli, pumpkin, peas… the flavour combinations for purees are unlimited! Purees are great as a side dish or pie filling! Blend mode is also perfect for baby food: fruit puree, meat and fish soups, oatmeal, etc. Upgrade your potato puree: • Add colour by adding carrot, beetroot or peas to your potatoes. • Enhance flavour by adding parmesan cheese, toasted bacon, fresh herbs, or spices. Maximum power - Turbo mode In Turbo mode, you’re operating the blades at maximum speed in short bursts. Pre-set pulse times of 0.5, 1 and 2 seconds helps give you the necessary control, so that you can gradually chop hard ingredients like nuts, Parmesan cheese, and chocolate into increasingly smaller pieces without turning them to mush. The selected pulse time can be repeated until the ingredient is chopped to your desired size. Tip: You can also briefly chop citrus fruit with a splash of water to obtain their juice without getting the bitter flavour from the white pith of the skin. A great solution for homemade lemonade! The powerful motor and sharp blades of Thermomix® make blending and chopping a breeze.
Truffles, sweets, tarts, mousses, cakes, sauces — there are so many ways to use chocolate! Whether you’re whipping up a quick ganache or preparing homemade truffles, your chocolate creations will turn out perfectly with your Thermomix®. Different types of chocolate • Dark chocolate with 60-70% cocoa solids is slightly sweet, with a dense chocolate flavour. • Milk chocolate has added milk and sugar, and a lower percentage of cocoa solids. • White chocolate is made from cocoa butter and does not contain any cocoa solids, meaning it’s not technically chocolate. It also lacks the antioxidant benefits of dark chocolate, as these antioxidants are found in cocoa, not cocoa butter. • Ruby chocolate was introduced in 2017 and considered one of the biggest innovations in chocolate. Pink in colour with a slight berry flavour, this new type of chocolate was one of the biggest food trends last year. Melting chocolate Place 200 g chocolate, in small pieces or callets, into mixing bowl. Grate 8 sec/speed 10. Scrape down sides of mixing bowl with spatula. Melt 3-4 min/50°C/speed 2 until chocolate is melted. Use as needed. Tempering chocolate Place 220 g chocolate, small pieces or callets, in mixing bowl. Melt 3 min/50°C/speed 3 until melted. Add 80 g chocolate and temper 2min/speed 3 Tips • Ensure the mixing bowl is thoroughly dry - if chocolate comes into contact with water it could cause it to ‘seize’. • Grating the chocolate helps it to melt faster. • If you have leftover chocolate in the mixing bowl, don’t throw it away - make hot chocolate! Simply add 250 g milk, heat 4 min/80°C/speed 2 then transfer to a mug and enjoy. Thermomix® and chocolate…a match made in heaven! Cooking homemade jam with your Thermomix® is not only a great treat for yourself, but also makes a thoughtful gift that your family and friends will love. A pot of your own fruity preserve will always beat shop-bought and make for a tasty sweet condiment. To make your own jam, all you need is fruit, lemon juice and sugar. How you choose to flavour your jam is up to you. Make the most of beautiful, seasonal berries with a pot of our classic Raspberry Jam, delicious to spread on freshly baked scones. Or, be a little more adventurous by mixing your fruits, as we have in our Apple and Kiwi Jam, the perfect accompaniment to hot buttered toast. Our top tips for making jam: Fresh is best Fresh, slightly unripe fruit always works best when making jam. Squishy, overripe fruit loses a lot of its acidity, which is essential for making sure your preserve sets properly. Beware of pectin! Pectin is something that occurs naturally in certain fruits, such as blackcurrants, apples, cherries, and cranberries. By adding sugar when heating the fruit, it will help your jam to thicken. If you’re using fruits with low levels of pectin, such as pears, you may need to add extra pectin to your mixture. Which type of sugar should I use? Opinions differ when it comes to the best sugar to use for homemade jam. It depends very much on the fruit you have chosen to use. Some sugars contain pectin, others don’t. Try to achieve a pectin balance with your fruit and sugar to make sure your jam has a perfectly spreadable texture. • Jam sugar (includes pectin): this has larger crystals, which gives the jam a clearer consistency. A downside is that it can be pricey compared to standard granulated sugar. • Preserving sugar: this is what we recommend if you’re using fruits with higher levels of pectin. This sugar dissolves slowly when cooked and will help your jam to set. •Granulated sugar: this works best with high-pectin fruits, such as cherries, strawberries and grapes. It’s cheaper than the other options, but your jam may be slightly runnier than if using preserving or jam sugar. • Caster sugar: the grains in caster sugar are smaller, which means they dissolve quicker which could result in burning your jam. Although it’s fine for homemade jams and preserves, your end product may be cloudy! •Sugar-free (and guilt-free): The best thing about homemade food, is that you have the final say on what goes in it. If you’d prefer a sugar-free jam, opt to use fruit juice or sweeteners. Always use sterilised jars Add a touch of sparkle to your tasty treats by preserving them in crystal clean containers so your jams and preserves will stay fresher for longer. Once sterilised, you can decorate your jam jars with ribbons, a pretty fabric top, or personalised labels.

Don’t rush Ice cream is one of those things which is best when you've waited for it. Get organised and make your ice cream way before you want to serve it so you can sit back and relax while your Thermomix® and freezer work together to bring you the BEST and creamiest ice cream. If you're wondering what that delicious-looking ice cream is up there, it's the Fig and Walnut Ice Cream. Find the recipe here. Leave it be This comes alongside number 1 on not rushing. Don’t be tempted to churn your ice cream before it’s fully frozen for the first or the second churn as we need it fully frozen for the best results. Freeze it in ice cube moulds so it freezes faster and is easy to pop out and churn once it’s nice and hard (rather than trying to cut up frozen ice cream into small pieces). Fat is your friend When creamy and delicious ice cream is your end goal, using full fat cream is the way to go, so as tempting as it may be to choose skim or low fat options, your creamy ice cream isn't the time to do it! The fat content helps to avoid crystallization and brings that beautiful creamy result. So, with ice cream - fat is your friend. You can always be portion-wise and treat-wise if you'd like to be. Do the double churn Doing the double churn may seem like extra time and effort, but it’s really just an essential part of the process when you want truly creamy ice cream. The second churn (after freezing for the second time) means your Thermomix® can work out any ice crystals from your ice cream and leave you with a smooth and creamy result. Try non-dairy There is always room for options, even with ice cream! So, if you're keen to try some non-dairy options then Thermomix® can definitely help you with that. The process for making non-dairy ice creams can be slightly different though, so use our delicious recipes on Cookidoo® as a guide and then get creative with your own combos. There are lots of options for using non-refined sugars and sweeteners as well. Here's the Strawberry Almond Gelato from Sweet Nourish to get you started. Chunky monkey If you love an ice cream with lots of chunky bits and treats, it’s so easy to add these in for that professional look and flavour. Just make your base then gently fold through your chunks of choice (using the reverse function on a low speed) after the second churn and freeze. Smooth and swirly It’s super easy to fancy up a simple ice cream with a delicious swirl-through puree or sauce. Puree up some fresh mango, make a simple fruit coulis or even a caramel or chocolate sauce then (once they’re cool), gently swirl them through your ice cream after the second churn and freeze. Icy poles, moulds and more Either freeze your ice cream straight into trays or into moulds to cover in chocolate or serve on a stick. The options are endless!
This week, celebrating Bastille Day and all things French cuisine, we’re tucking into super smooth Chicken liver mousse thanks to chefs Clement Remond and Arnaud Pellegrino from L’Atelier Gourmet Food and Decadent Private Dining, where the chefs use Thermomix® to create their sought-after charcuterie and private dining menus. The pair recently ran an exclusive masterclass for our Thermomix® Consultants and will be live streaming on to our Facebook page Thursday 14 July, to share their secrets to making authentic pate in Thermomix®. From Paris to California to Australia, Arnaud Pellegrino (pictured left) has worked along some of the best chefs in the world, such as renowned Michelin Stars chef Guy Savoy and Australian celebrity chef, Matt Moran. Arnaud’s love of food and cooking started at a young age, as did his knowledge of Thermomix®. “I started cooking when I was really young and have always used Thermomix® - my Mum had one as a kid,” he says. French born and bred, Clement Remond’s (pictured right) career in food began in Western Australia, where he started his foray into the kitchen working with none other than highly acclaimed Alain Fabrègues for the opening of the Bistro des Artistes restaurant. Clement and Arnaud met when working at Friend’s restaurant in Perth, where their idea of starting a food business specializing in authentic French charcuterie began. Arnaud was making his chicken liver pate as a fine dining canape at the restaurant. One day, he said “Imagine if we put the pate in a jar and sold it!” says Clement. Well, that was all it took. The pair made 600 jars as a trial, which sold out in no time, and soon began L’Atelier Gourmet Foods as their side hustle. Just like many of our Thermomix® Consultants, what started as a side hustle for the chefs soon grew into their full-time business. L’Atelier Gourmet products are now stocked in more than 60 fine food stores and restaurants in WA, with expansion into the east coast soon on the cards. Less than a year into L’Atelier, Clement and Arnaud also launched their Perth-based private dining business, Decadent Private Dining, with friend and fellow hospitality professional, Matthieu Fichot. The threesome offer the authentic French gourmet experience to private groups around Perth, where Thermomix® is once again at the heart of their kitchen. “The hosts just need to invite their guests, we do everything else,” says Clement. “From the table setting, to the food, the service and of course, the clean-up.”
