  • 20 g extra virgin olive oil
  • 20 g baby pickled capers
  • 200 g beetroot (approx. 2 small beetroot), peeled and cut into quarters
  • 140 g red radishes (approx. 4)
  • 4 slices seeded wholemeal bread, toasted (see Tip)
  • 240 g fresh baby spinach, to serve
  • 2 tbsp fresh chives, chopped
  • ground black pepper, to season
