Ingredients

Pastry

  • 100 g butter, chilled and cut into pieces
  • 60 g hazelnuts
  • 40 g quinoa flakes
  • plain flour, for dusting
  • 60 g wholemeal plain flour
  • 1 egg
  • 2 - 3 tsp cold water

Filling

  • 3 - 4 limes, zest only, to taste
  • 2 tbsp raw sugar
  • 60 g honey (see Tips)
  • 150 g freshly squeezed lime juice
  • 2 tsp cornflour
  • 150 g coconut milk
  • 2 eggs
  • 3 egg yolks
  • 1 tsp finger lime powder (optional - see Tips)
  • finger limes, to serve
  • whipped cream, to serve
