  • 2 sdt garam laut
  • ¾ sdt lada hitam bubuk
  • 4 tangkai thyme segar
  • 1400 g air, pastikan kantong benar-benar terendam air (lihat tips)
  • 30 g sari lemon (lihat tips)
    or 1 sdt asam askorbat
  • 50 g bawang merah
  • 1 - 2 tangkai tarragon, segar, daunnya saja, sesuai selera
  • 50 g dry white wine
  • 15 g white wine vinegar
  • 200 g mentega tawar, potong dadu, tambah 1 sdm untuk steak panggang
  • 4 kuning telur, masing-masing berkisar 20 g
