Ingredients

  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 1/2 tsp ground galangal
  • 6 - 8 fresh long green chilies, trimmed, deseeded if preferred and cut into halves
  • 2 stalks fresh lemongrass, white part only, cut into pieces (3 cm)
  • 1 tsp very finely chopped makrut (kaffir lime) zest or 4-5 makrut leaves
  • 5 garlic cloves
  • 4 shallots, trimmed and cut into pieces
  • 6 sprigs fresh coriander, roots included
  • 1 handful Thai basil
  • 2 tsp shrimp paste, to taste
  • 20 g vegetable oil for blending, plus extra if needed
