  • ¼ tbsp ground black pepper
  • 1 ½ tsp sea salt
  • 30 g fresh red bird's eye chilli
  • 2 makrut lime leaves
  • 4 cm fresh ginger
  • 2 tsp shrimp paste
  • 1 tsp coconut oil
  • 1 whole chicken

Betutu chicken

  • 1 banana leaf, blanched or wilted over open flame (approx. 40 x 50 cm)
  • 800 g boiling water
  • 40 g roasted unsalted peanuts
