Ingredients

  • 4 - 5 sprigs fresh flat-leaf parsley, leaves only,
    or 4 - 5 sprigs fresh coriander, leaves only
  • 250 g water, plus extra as needed
  • 1000 g fresh mussels, shells scrubbed and de-bearded
  • 30 g extra virgin olive oil, plus extra for serving
  • 30 g shallots, cut in halves
  • 3 garlic cloves
  • 1 fresh red chilli, small, deseeded (optional)
    or ½ tsp dried chilli flakes (optional)
  • 50 g dry white wine (optional)
  • 120 g cherry tomatoes, cut in halves
  • 40 - 50 g tomato purée (concentrated)
  • 1 pinch salt
  • 350 g penne or similar short dried pasta
