Ingredients

Marinade

  • 30 g garlic cloves
  • 2 tbsp dried oregano
  • 15 g achiote paste
  • ½ tsp ground black pepper
  • ½ tsp ground cumin
  • 100 g white vinegar
  • 285 g orange juice, sour
  • 100 g onions, in pieces
  • 2 tsp salt
  • 995 g pork shoulder, boneless or Boston butt, boneless, cut into cubes (5 cm/2 in.)

Pickled Onions

  • 140 g red onions, quartered
  • 30 g orange juice
  • 15 g white vinegar
  • 2 pinches dried oregano
  • ½ tsp salt

Habanero Sauce

  • 5 habanero chillies
  • 15 g lemon juice
  • ¼ tsp salt
  • 30 g water

Cochinita Pibil

  • 30 g vegetable oil
    or 30 g lard
