  • avocado oil, to rub
    or unsalted butter, melted, to rub
  • salt, to season
  • ground black pepper, to season

  • 4 oz cauliflower florets, small stems removed
  • 2 oz yellow onion, cut into pieces
  • 1 oz celery, cut into pieces (1 in.)
  • 1 ½ oz walnut halves
    or 1 ½ oz pecan halves
  • 1 oz avocado oil
  • ¼ tsp salt
  • 1 pinch ground black pepper
  • 5 oz cremini mushrooms, destemmed, quartered
  • 1 oz dried cranberries, unsweetened (optional)
  • 1 ½ tsp tamari sauce
  • 1 ½ tsp apple cider vinegar
  • 40 oz water
