    or wholemeal flour
  • 80 g water, ice cold
  • 220 g unsalted butter, diced
  • 2 - 3 pinches ground nutmeg, to taste
  • 1 ¼ - 1 ½ tsp fine sea salt, to taste
  • 80 g Gruyère cheese, cut in pieces (2 cm)
    or Parmesan cheese, cut in pieces (2 cm)
  • 80 g shallots, halved
  • 5 sprigs fresh parsley leaves
  • 2 garlic cloves
  • 400 g fresh mushrooms (e.g. chanterelles, boletes, oyster mushrooms), sliced
    or fresh button mushrooms, sliced
  • 80 g double cream
  • 3 - 4 pinches ground black pepper, to taste
  • 1 medium egg, lightly beaten, for brushing
  • fresh thyme leaves, for garnishing
