  • 400 g salt cod, presoaked, desalted and shredded (see tip)
  • 1 pinch fine sea salt
  • 1 pinch ground black pepper

  • 300 g milk
  • 60 g plain flour
  • 30 g unsalted butter, diced
  • ½ tsp fine sea salt
  • 1 pinch ground black pepper
  • 1 pinch ground nutmeg
  • 200 g double cream
