    or 10 oz ruby chocolate, callets or pieces, i.e. Callebaut couverture
  • 3 ½ oz heavy whipping cream
  • 2 oz fresh raspberries
  • ½ oz glucose (see Tip)

Chocolate Pastry Dough

  • 12 oz all-purpose flour, plus extra to dust
  • 5 oz confectioners sugar
  • 2 oz almond flour
  • 1 oz Dutch-processed cocoa powder
  • ⅛ tsp salt
  • 6 oz unsalted butter, diced, chilled
  • 1 large egg
  • 1 egg yolk, from a large egg
  • 1 tsp ice water
