  • 21 oz Chinese cabbage, core removed, cut into pieces (2 in.), divided
  • 3 tbsp salt (e.g. non-iodized, canning or pickling salt)
  • 16 oz water, divided, plus extra for soaking
  • 7 oz carrots, cut into pieces (1 in.)
  • 5 ½ oz Chinese white radish, cut into pieces
  • 5 ½ oz onions, halved
  • 1 oz fresh ginger, peeled, sliced (½ in.)
  • 6 garlic cloves
  • 1 oz brown sugar
  • 2 oz spring onions, cut into pieces (approx. 2 in.)
  • 2 tbsp fish sauce
  • 1 - 2 tbsp dried chili flakes, medium mild (see Tip)
  • 1 oz lemon juice
