Ingredients

  • 100 g leek, trimmed and cut into pieces
  • 1 ½ tbsp extra virgin olive oil
  • 250 g liquid vegetable stock (see Tips)
  • 1 tbsp lemon juice
  • 600 g red potatoes, peeled and cut into pieces (1-2 cm)
  • 600 g skinless, firm white fish fillets, cut into pieces (2-3 cm)
  • 1 sweet corn cob, kernels removed
  • 5 sprigs fresh parsley, leaves only, roughly chopped
  • 80 g milk of choice, plus 1 tablespoon extra
  • 1 tbsp arrowroot flour (see Tips)
  • 30 g butter
