Ingredients

Puff Pastry

  • 350 g plain flour, plus extra for dusting
  • 250 g unsalted butter, diced (1-2 cm), 50 g cold, 200 g frozen for 30 minutes
  • 1 tsp fine sea salt
  • 150 g water, ice cold

Filling

  • 20 g fresh coriander leaves
  • 60 g bread, torn in pieces
  • 2 garlic cloves
  • 1 red chilli, halved, deseeded if desired
  • 120 g onions, quartered
  • 25 g fresh root ginger, peeled, cut in round slices (2 mm)
  • 20 g sesame oil
  • 3 - 4 tsp Thai red curry paste, to taste
  • 450 g beef mince (10% fat), broken in pieces
  • 5 spring onions, finely sliced
  • ½ tsp fine sea salt

Assembly

  • 1 medium egg, beaten
  • poppy seeds, for garnishing
