Ingredients

  • 1200 g water
  • 120 g olive oil
  • 350 g spaghetti
  • 4 garlic cloves
  • 1 - 2 fresh chillies, to taste, and deseeded, if preferred
  • 2 pinches salt, to taste, plus extra for seasoning
  • 2 pinches ground black pepper, to taste, plus extra for seasoning
  • 4 pieces lemon peel (5 x 2 cm each), no white pith
  • 150 g hot smoked trout, flaked into pieces (see Tip)
  • 40 - 60 g lemon juice, to taste
  • 3 tbsp pickled capers, drained
  • 3 - 4 sprigs fresh flat-leaf parsley, leaves only, roughly chopped
