  • 500 g water, plus 6 Tbsp water
  • 400 g cauliflower, in pieces (3-4 cm)
  • 1 tsp fine sea salt
  • ¼ tsp ground pepper
  • 1 garlic clove
  • 2 Tbsp red curry paste (30 g)
  • 95 g tomatoes, quartered
  • 60 g onions, quartered
  • 10 g fresh mixed herbs, leaves only, to taste (e.g parsley, coriander)
  • 240 g black beans, whole, tinned, drained (1 x 400 g tin)
  • 100 g polenta, for coating
  • 4 Tbsp sunflower oil, for frying
