Ingredients

Sweet and sour chilli sauce

  • 1 lime, zest only, no white pith
  • 1 - 1 ½ fresh red chillies, deseeded if preferred, to taste
  • 1 garlic clove
  • ½ tsp ground black pepper
  • 2 cm piece fresh ginger, peeled
  • 20 g lime juice
  • 3 sprigs fresh mint, leaves only
  • 3 sprigs fresh coriander, leaves and roots only
  • 80 g fresh pineapple, cut into pieces
  • 70 g tomato
  • 20 g honey
  • 20 g tamari
  • 1 pinch sea salt

Rice paper rolls

  • 100 g carrot, cut into quarters
  • 1 red apple, cored and cut into halves
  • 180 g red cabbage, cut into pieces (6-8 cm)
  • 8 sprigs fresh coriander, stalks only, leaves reserved
  • 2 tbsp roasted salted peanuts
  • 1 avocado, flesh only
  • 2 - 3 pinches salt
  • 2 - 3 pinches ground black pepper
  • 10 rice paper roll wrappers (see Tips)
  • ½ yellow peach, stone removed and flesh cut into thin slices
  • 2 sprigs fresh mint, leaves only
  • 1 Lebanese cucumber, peeled into ribbons
