Ingredients

Spelt pastry

  • 200 g unsalted butter, cut into small pieces (1-2 cm) and frozen
  • 200 g wholemeal spelt flour, plus extra to dust
  • 90 g chilled water
  • ½ tsp sea salt

Filling

  • 180 g brown onion, cut into halves
  • 1 tbsp dried oregano
  • 100 g walnuts or pepitas
  • 90 g rolled oats
  • 3 eggs
  • 150 g feta cheese, cut into pieces (3 cm)
  • 1 tbsp soy sauce
  • 50 g breadcrumbs

Assembly

  • wholemeal spelt flour, to dust
  • milk, to brush
  • sesame seeds, to sprinkle (optional)
