Ingredients

Pork Gyro Filling

  • 4 oz mozzarella cheese (low-moisture), cut into pieces
  • 5 oz feta cheese, in pieces
  • 2 tsp fennel seeds
  • 4 oz yellow onions, cut into pieces
  • 1 garlic clove
  • 1 tbsp tomato paste
  • ½ oz olive oil
  • 2 - 3 tsp spice mixture for gyros, to taste (see Tip)
  • ½ tsp chili flakes (optional)
  • 1 - 2 sprigs fresh dill fronds
  • 16 oz ground pork, broken into pieces

Phyllo Dough

  • 4 oz unsalted butter, diced (1 in.)
  • 10 sheets phyllo dough

Tzatziki Sauce

  • 1 garlic clove
  • 3 ½ oz Persian cucumber, cut into pieces (1 in.)
  • 2 sprigs fresh dill fronds, plus extra to garnish
  • 8 oz plain Greek yogurt
  • 1 tsp lemon juice
  • ¼ tsp salt, to taste
