Ingredients

Butter buns

  • 90 g butter, cut in pieces
  • 280 g high protein flour (bread flour)
  • 50 g fresh milk
  • 2 eggs (approx. 100 g)
  • 25 g sugar
  • 1 tsp dried yeast
  • 1 tsp salt
  • 500 g water

Homemade mayonnaise

  • 150 g sunflower oil
  • 2 egg yolks (approx. 60 g)
  • 15 g lemon juice
  • 1 tsp salt
  • 1 pinch freshly ground black pepper

Lobster seafood salad and assembly

  • 1 whole lobster
  • 500 g water
  • 120 g fresh prawns, horizontally halved
  • 70 g shallots, shredded
  • 40 g cucumber, seeds removed, diced
  • 10 g fresh ginger, shredded
  • 20 g fresh cherry radish, cut in thin slices
  • 10 g lemon juice
  • 10 g lime juice
  • 2 sprigs spring onion, chopped
  • 1 tsp salt
  • sea salt, to garnish
  • extra virgin olive oil, to garnish
  • fresh coriander leaves, to garnish
  • fresh red chillies, shredded, to garnish
