  • 700 g water, plus extra for baking
  • 1000 g fresh green peas with pods, trimmed
  • plain flour, for dusting
  • 150 g cream, min. 30% fat (e.g. whipping or double cream)
  • 60 g olive oil, plus extra for greasing
  • 1 tsp salt
  • 2 pinches ground black pepper
  • 1 - 2 pinches ground nutmeg, to taste
  • 3 medium eggs

Yoghurt and Mint Cream

  • 5 g fresh mint leaves, plus extra for serving
  • 1 lemon, 5 g finely grated zest and 5-10 g juice to taste
  • 150 g Greek yoghurt
  • 2 pinches salt
  • 2 pinches ground black pepper
