Ingredients

  • 2 garlic cloves
  • 50 g onions
  • 100 g olive oil
  • 200 g mixed peppers, cut in pieces (2 cm)
  • 200 g mixed beans, frozen (e.g. flat green beans, lima beans, navy beans)
  • 100 g courgettes, cut in pieces (2 cm)
  • 100 g green asparagus, cut in pieces (3 cm)
  • 50 g carrots, sliced
  • 100 g canned crushed tomatoes
  • 1 ½ tsp salt
  • 1 pinch dried rosemary, chopped
  • ½ tsp sweet paprika
  • 1 - 2 pinches saffron threads
  • ½ tsp yellow food colouring powder (paella colorant) (optional)
  • 1 pinch ground cayenne pepper
  • 700 g vegetable broth
  • 300 g short-grain rice
  • 1 - 2 artichokes, trimmed, cut in eights (optional)
  • 2 fresh button mushrooms, sliced
  • 1 lemon, cut in wedges, for serving
