Ingredients

Yogurt Dressing

  • 5 ½ oz plain Greek yogurt
  • 5 sprigs fresh thyme leaves
  • ¼ tsp salt
  • ⅛ tsp ground black pepper
  • 1 lemon

Turmeric Marinade

  • 1 garlic clove
  • 1 oz extra virgin olive oil
  • ½ tsp salt
  • ½ tsp ground turmeric
  • 16 oz chicken breast fillets, boneless, skinless, in pieces (1 in.)

Chopped Vegetables

  • 3 oz red bell peppers, deseeded and cut into pieces
  • 5 oz cauliflower florets
    or 5 oz broccoli florets
  • 1 tsp apple cider vinegar
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • 1 oz extra virgin olive oil

Rice and Assembly

  • 7 oz long-grain brown rice
  • 40 oz water
  • 1 tsp salt
  • 8 oz red beets, peeled and cut into pieces (½ in.)
  • 7 oz sweet potatoes, peeled and cut into pieces (½ in.)
  • 1 oz extra virgin olive oil
  • 1 - 2 tbsp honey
  • 8 oz cucumber, quartered and sliced
  • 2 ripe avocados, sliced
