Ingredients

  • 3 tbsp circular kelp head (optional)
  • 10 g dried Japanese kelp (kombu), cut in squares (2 cm x 2 cm), rinsed
  • 6 dried shiitake mushrooms, rinsed, soaked to soften for 30 minutes
  • 300 g white radish, peeled, cut in chunks (2 cm)
  • 4 slices fresh ginger, peeled
  • 1 fresh red chilli
    or 1 dried chilli
  • 2 tbsp cold pressed sesame oil
  • 2 tbsp 3-booster powder (see tip)
  • ¼ tsp sea salt
  • 2 tbsp light soy sauce
  • 1 tbsp blackstrap molasses
  • 200 g water
  • 1 tsp molasses powder
  • 1 tbsp balsamic vinegar
