Ingredients

Mexican mince

  • 1 carrot, cut into pieces
  • 1 brown onion, cut into halves
  • 2 garlic cloves
  • 1 fresh chilli, deseeded if preferred
  • 1 celery stalk, cut into pieces
  • 1 tbsp oil
  • 500 g beef mince, broken into pieces
  • 1 tbsp tomato paste
  • 30 - 40 g taco seasoning
  • 125 g canned sweet corn kernels, rinsed and drained (optional)
  • 400 g canned kidney beans, rinsed and drained (approx. 250 g after draining)
  • 1 tbsp pickled jalapeño chillies, drained and roughly chopped
  • 150 g water
  • ½ red capsicum, cut into pieces (1-2 cm)

Mashed potatoes

  • 40 g tasty cheddar cheese
  • 1000 g potatoes, peeled and cut into pieces (2-3 cm)
  • 1 tsp salt
  • 60 g water
  • 110 g milk
  • ¼ tsp ground black pepper
  • 20 g salted butter
  • pickled jalapeño chillies, roughly chopped (optional)
