  • 2 ferske ørreder, (ca. 220 g hver), rensede og skrabet for skæl
  • 2 citroner (inklusive citron til servering)

  • 100 g smør, skåret i mindre stykker
  • 4 æggeblommer
  • 50 g hvidvin
  • 10 g citronsaft, friskpresset
  • ½ tsk salt
  • ¼ tsk sort peber, stødt, efter smag
