Ingredients

Pickling spice

  • 6 dried red chillies (Kashmiri chillies or long red chillies)
  • 2 tsp fennel seeds
  • 1 tsp fenugreek seeds
  • 1 tsp black mustard seeds
  • ½ tsp nigella seeds
  • 1 tsp sea salt flakes

Murgh

  • 60 g canola oil
  • 1 tsp black mustard seeds
  • 750 g chicken thigh fillets, cut into cubes (3 cm)
  • 180 g natural yoghurt
  • 2 tsp ground turmeric
  • 2 tsp Kashmiri chilli powder
  • 1 ½ tsp salt
  • 250 - 300 g paneer, cut into cubes (1.5 cm) (see Tips)
  • 2 brown onions, cut into quarters
  • 1 tbsp ginger paste (see Tips)
  • 1 tbsp garlic paste (see Tips)
  • 80 g fresh tomato, cut into quarters
  • 80 g tomato paste
  • ½ tsp Chicken stock paste (see Tips)
  • 1 bunch fresh coriander, leaves only, torn into pieces, plus extra for garnishing
  • ½ tsp ground black pepper
