Ingredients

  • 20g extra virgin olive oil
  • 80g onion
  • 10g My taco seasoning (or other, adjust for taste)
  • 1 tsp cornflour
  • 1/4 tsp of chilli powder. Optional if you want heat +/- 1
  • 200g lean beef mince
  • 400g diced tomatoes (use a good  brand with a thick sauce)
  • 125g black beans (tinned) rinsed, drained
  • 125g canned corn kernels, tinned, drained or frozen
  • 250g beef stock (or equivalent stock paste and water)
  • 2 wraps
  • 2 tablespoons sour cream or yoghurt
  • 1/4 bunch coriander, leaves picked (to serve)
