Ingredients

  • For the Sticky Rice:
  • 250-280g glutinous sticky rice
  • For the Thai Chicken Curry:
  • 1 portion red curry paste (see notes)
  • 30g cooking oil
  • 80g onion, peeled and quartered
  • 50g carrot, peeled and roughly chopped
  • 20g garlic
  • 20g ginger
  • 1 tin Annalisa whole tomatoes
  • 1 UHT 200 ml pack coconut cream or similar
  • 1/2 tsp turmeric
  • 1/4 tsp coriander powder
  • 1/4 tsp cumin powder
  • 600g chicken thigh pieces (each fillet cut into 6 pieces)
  • a handful or more Asian Veg (optional)
