Ingredients

  • For the Buns
  • 540g plain flour
  • 50g butter, cold and cubed
  • ¼ tsp good-quality flaked salt (such as pink Murray River)
  • 330g milk
  • 50g caster sugar
  • 8g dry instant yeast
  • 1 large egg (I used extra large 55g)
  • 50g currants, rinsed
  • 50g sultanas, rinsed
  • For the Icing
  • 250g icing sugar
  • 10g butter
  • 1 tbsp water (adjust as needed)
  • A couple of drops of pink food coloring
  • Desiccated coconut for sprinkling
