Ingredients

  • 300 g basmati rice
  • 200 g onions, quartered
  • 3 garlic cloves
  • 30 g ghee or olive oil
  • 700 g water
  • 50 g chicken stock paste
  • 50 g tomato paste
  • 30 g chipotle in adobo sauce
  • cracked black pepper, to taste
  • parsley, fresh, to garnish
  • lime wedges, to serve
  • 1 tin of black, red or mixed Mexican beans, washed & drained
  • mixture of vegetables, corn kernels / capsicum / carrot - cooked if preferred
