Ingredients

  • 20g olive oil
  • 1–2 cloves garlic peeled.
  • 80g brown onion cut into quarters
  • 2 chorizo sausages
  • 180g carrot, peeled diced small
  • 40g celery stick finely sliced
  • 1/2 tablespoon chopped fresh herbs (e.g., thyme or your preferred herb) or 1 heaped tsp of my herb blend.
  • 1 tsp flaked salt or 1/2 tsp of fine salt
  • 1 tin cannellini beans (or beans of your choice), drained
  • 1 tin whole tomatoes (Annelise variety recommended) *See Tips
  • 1 tsp brown sugar
  • 1 small packet of baby spinach leaves
