Bec's Table Chicken, Leek & Bacon Risotto

Ingredients

  • 100 g Parmesan cheese, cut into 1 cm cubes
  • 2 garlic cloves
  • 80 g leeks, washed and cut
  • 100 g streaky bacon, cut into lardons (or chorizo)
  • 20 g olive oil
  • 30 g unsalted butter, cubed
  • 300 g risotto rice (e.g. Arborio or Carnaroli)
  • 60 g white wine
  • 350 g chicken thigh fillets, cut into bite-sized pieces (or left whole for baked risotto)
  • 600 g water
  • 1 Continental chicken stock pot
  • ¼ tsp ground black pepper
  • 80 - 100 g frozen peas (optional, but highly recommended!)
