Asian Pumpkin & Chicken Soup

Ingredients

  • 2 cm cube of fresh Ginger
  • 2 Garlic cloves
  • 1 Brown Onion, peeled and quartered
  • 1 Carrot (100-120g approx) cut into chunks
  • 500g Pumpkin, optional skin on, cut into chunks
  • 1 TBsp Thermo Veggie stock (or 1 tsp Salt)
  • 1⁄2 tsp Black Pepper, to taste
  • 1 tsp Curry powder
  • 1⁄2 tsp Cumin, ground, to taste
  • 1 tsp Turmeric, ground
  • 1⁄2 tsp Paprika, ground, to taste
  • Pinch of Chilli flakes, optional
  • 3 Sprigs of Coriander (or Basil if preferred)
  • 450g Water
  • 80g Coconut cream
  • 500g Chicken tenderloins
