Ingredients

  • 250 g beetroot, raw, washed and cut into pieces
  • 200 g dark chocolate chips (eg Ghiradelli 72% chocolate chips)
  • 150 g brown sugar
  • 100 g self-raising flour
  • 425g canned black beans drained and rinsed
  • 50 g pistachios
  • 60 g sunflower oil
  • ½ tsp bicarbonate of soda
  • ½ tsp baking powder
  • 1 tsp vanilla extract
  • 2 large eggs
  • 80g dark chocolate (eg 72% cocoa) chips
  • 60g milk or cream (the higher the fat content, the shinier the ganache)
  • 50g pistachios for decorating (optional)
