Ingredients

  • 250 g white quinoa
  • 480 g water, plus extra for soaking
  • 1 heaped tsp homemade vegetable stock paste
  • ½ tsp crumbled salt (optional)
  • 1/2 cup fresh coriander, leaves only
  • 2 spring onions, cut into pieces
  • 1 Tbsp. finely grated ginger
  • 1 teaspoon sesame oil
  • lime cheeks, mint and extra coriander leaves, to serve
